- 1 ½ cups all-purpose flour
- 1 cup shredded zucchini (do not peel!)
- ¾ cup sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your Traeger grill to 350°F.
- In a large mixing bowl, combine the flour, sugar, brown sugar, baking soda, baking powder, and salt. In a separate bowl, whisk the eggs, vegetable oil, and vanilla extract. Stir the wet ingredients into the dry ingredients.
- Fold in the shredded zucchini and chocolate chips. Do not overmix.
- Grease your muffin tin or line it with muffin liners. Scoop the batter into the cups, filling each about two-thirds full.
- Place the muffin tin on the grill grate, close the lid, and bake for 18-22 minutes, or until a toothpick inserted comes out clean.
- Remove from the grill, let cool, and enjoy!
Notes
You can experiment with different mix-ins like chopped nuts or coconut for added texture. Don’t forget to toss the chocolate chips in flour to keep them evenly distributed in the batter.
