Ingredients

  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • ¼ cup olive oil
  • 1 tablespoon honey or agave syrup (to taste)
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Juice the limes and oranges to get 2 tablespoons each of lime and orange juice. Remove any seeds.
  2. In a small bowl or jar, combine the lime juice, orange juice, olive oil, apple cider vinegar, minced garlic, and your choice of sweetener (honey or agave syrup).
  3. Add salt and pepper to taste and whisk or shake vigorously to combine until the dressing emulsifies.
  4. Taste and adjust the seasoning if necessary, adding more honey/agave for sweetness or olive oil for a creamier texture.
  5. Serve immediately, or store in the fridge for up to 1 week. Shake well before using.

Notes

For a smoother consistency, use a blender or add a teaspoon of Dijon mustard for extra creaminess.
