  • Olive oil for brushing
  • 4 ounces goat cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup fresh basil, chopped

Instructions

  1. Season the chicken breasts with salt, pepper, and garlic powder. Brush with olive oil.
  2. Preheat the air fryer to 375°F (190°C). Cook the chicken for 20-25 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
  3. Meanwhile, mix the goat cheese, spinach, and artichokes in a small bowl to create the topping.
  4. In a saucepan, melt the butter over medium heat. Sauté the garlic until fragrant, then add chicken broth and lemon juice. Let simmer for 3-4 minutes.
  5. Stir in fresh basil and cook for another 1-2 minutes. Remove from heat.
  6. Once the chicken is cooked, top with the goat cheese mixture and drizzle with the lemon basil sauce. Serve immediately.

Notes
