- 4 boneless, skinless chicken breasts

- Pepper, to taste
- 1 teaspoon garlic powder
- Olive oil for brushing
- 4 ounces goat cheese, crumbled
- 1 cup fresh spinach, chopped
- 1 cup artichoke hearts, chopped
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup fresh basil, chopped
Instructions
- Season the chicken breasts with salt, pepper, and garlic powder. Brush with olive oil.
- Preheat the air fryer to 375°F (190°C). Cook the chicken for 20-25 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
- Meanwhile, mix the goat cheese, spinach, and artichokes in a small bowl to create the topping.
- In a saucepan, melt the butter over medium heat. Sauté the garlic until fragrant, then add chicken broth and lemon juice. Let simmer for 3-4 minutes.
- Stir in fresh basil and cook for another 1-2 minutes. Remove from heat.
- Once the chicken is cooked, top with the goat cheese mixture and drizzle with the lemon basil sauce. Serve immediately.
Notes
Feel free to swap goat cheese for feta or ricotta if you prefer. Serve with a green salad or roasted vegetables for a complete meal.
