Ingredients
2-inch thick filet mignon
Kosher salt
Freshly ground black pepper
Optional: garlic powder, rosemary, olive oil
Instructions
1. 1. Preheat grill to 450°F–500°F.
2. 2. Dry brine filet mignon with kosher salt and refrigerate for 12-24 hours.
3. 3. Remove from fridge 30-45 minutes before grilling.
4. 4. Grill each side for 5-6 minutes for medium-rare, until internal temperature reaches 130–135°F.
5. 5. Let the steak rest for 10 minutes before serving.
Notes
For a medium-well steak, increase grilling time to 8-9 minutes per side.
