- 2 chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt, to taste
- 2 cups cooked rice
- 1 cup pinto or black beans, heated
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1–2 teaspoons hot sauce (adjust to spice preference)
- 1/2 cup pico de gallo
- 1 cup shredded cheddar and mozzarella cheese blend
- 4 flour tortillas
Instructions
- Marinate the chicken in olive oil, lime juice, garlic, chili powder, and salt for at least 30 minutes.
- Grill the chicken on medium-high heat for 6-7 minutes per side until fully cooked. Slice into strips.
- Cook rice as per instructions. Season with salt and lime juice.
- Warm the beans in a small pot on medium heat.
- For the Baja sauce, whisk together mayonnaise, sour cream, lime juice, and hot sauce.
- Warm the tortillas in a skillet.
- Assemble the burritos by spreading Baja sauce on each tortilla. Add grilled chicken, rice, beans, pico de gallo, and cheese.
- Roll up the tortillas tightly and grill them for 2-3 minutes on each side until crispy and golden brown.
- Serve with extra Baja sauce or chips if desired.
Notes
Make sure to marinate the chicken to infuse flavor, and don’t skip the Baja sauce for that signature tang!
